American Flatbread – Flatbread Kitchen

Tonight’s menu and baking are dedicated to
New Writings
If these dedications are mini-essays to be completed on this single page, then for the past two weeks I have been writing micro-essays to be complete in not more than three short sentences drawn upon the confines of a 3×5 card. They are hand-written ‘thank you’ cards for our frozen flatbreads. I have written 237 to date. My goal is one thousand. Each one its own story, though I did not understand that when I began.
A thousand storied compressed into a handful of words each. A thousand stories which will mostly be thrown away. A thousand stories to write at a rate of twenty or thirty a day (yesterday was a good day, I wrote forty, today so far, none).
This is the magic of it: fast stories, devoid of editing, unbound by fear. Free writing simply for the joy of it, and to, in the most heartfelt way I can, say thank you.
As always, thank you for coming tonight.
Love,
George
