Hello Middlebury ♥

 

            Last night, (Thursday for those of you reading this Saturday evening) was our first public bake in Middlebury. It was the culmination of two years of dreaming and eight months of planning and hard work. The final hours before we opened were a mad dash. I wonder if there has ever been a calm restaurant opening. If so, it was done by far more organized and disciplined souls than I. Like theater’s curtain call, we set a date and time that we knew would stretch our abilities. Such markers are a form of external discipline, maybe a crutch, but one we gladly used. There is imperfection in such a strategy; more survival than purity, more a leap of faith than the assuredness that comes from travelling a familiar path.

            And what has come of this leap of faith?

            A new bakery in the world. A bakery dedicated to the people and places of its community. A bakery dedicated to creating food that is fun and good, that is nutritious and respectful, and that honors and remembers; that laughs readily and deeply and is of goodwill.

            Thursday evening, over 500 people came to this new bakery. Thank you dear Middlebury, for your warm welcome. So many did so much to bring this bakery to life. Someday, if I am lucky, I will thank each of you individually.

            Hello Middlebury. We are glad to be with you. And thank you to all in Waitsfield. Your many kindnesses have provided the courage to go on.
