Tonight’s menu and baking are dedicated to
“So let me see if I have this right,” the exasperated guest said to me: “You start taking names for ‘The List’ at 4:30, but to eat at 5:30 I really need to be here closer to 3:30 and then wait an hour. Then go home. Then come back, and then wait for our table because it is not really a reservation. And sometimes, even getting here at 3:30, there is already a line and I am told that I can not eat until 9PM!”
“Why don’t you take reservations?! Why can’t I call? That way I would not have to drive here twice. What kind of place is this? Grrrrr….”
We know… and we are sorry that sometimes trying to eat at flatbread is more like a contact sport than a relaxing evening out.
The system we have is imperfect, but it is less imperfect than all of the other systems we have tried. If we took reservations, we would have to charge twice as much. When it was simply first come, first serve, people waited for hours, sometimes in the cold.
